Ingredients:
- 2 tbsp. olive oil: For sautéing the garlic and onions, and browning the beef.
- 4 garlic cloves, finely minced: Adds a fragrant and slightly spicy flavor to the dish.
- 1 onion, diced: Provides a sweet and savory base.
- 500g / 1 lb beef mince / ground beef (or lamb): Adds protein and a rich, meaty flavor.
- 1/2 tsp cooking salt / kosher salt (for the beef): Seasons the beef as it cooks.
- 1 1/2 tbsp dried oregano: Adds a Mediterranean herb flavor.
- 2 tbsp tomato paste: Concentrates the tomato flavor and thickens the sauce.
- 300g / 10oz eggplant, cut into 1.5cm / 3/5" cubes: Adds a creamy texture and absorbs the flavors of the dish.
- 1/3 cup pinot noir or other dry red wine (optional): Adds depth and richness to the sauce.
- 1 cup basmati rice, uncooked: Provides the carbohydrate base for the dish.
- 400g / 14 oz can chickpeas, drained: Adds texture and additional protein.
- 400g / 14 oz can crushed tomato: Forms the base of the sauce with a fresh, tangy flavor.
- 1 1/2 cups chicken stock/broth, low sodium: Adds moisture and enhances the flavors of the dish.
- 1 1/4 tsp cooking salt / kosher salt (for broth): Balances the flavors in the dish.
- 1/2 tsp black pepper: Adds a mild heat and depth of flavor.
To Serve:
- 1 tbsp. parsley, finely chopped (optional): Adds a fresh, herby garnish.
- Extra virgin olive oil, for drizzling: Adds a rich, fruity finish.
- Dollop of Greek yogurt (optional): Provides a cool, creamy contrast to the warm, savory dish.
Instructions:
- Prepare the Beef and Vegetables:
- Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and diced onion. Sauté until the onion becomes translucent, about 3-4 minutes, stirring frequently to prevent burning.
- Add the ground beef (or lamb) to the skillet. Season with 1/2 tsp of cooking salt. Cook, breaking up the meat with a spoon, until browned and no longer pink, about 5-7 minutes.
- Add Seasonings and Eggplant:
- Stir in the dried oregano and tomato paste. Cook for 1-2 minutes until the tomato paste darkens slightly and becomes fragrant.
- Add the eggplant cubes and mix well to ensure they are evenly coated with the spices and tomato paste. Cook for about 5 minutes until the eggplant starts to soften and absorb the flavors.
- Deglaze and Simmer:
- If using, pour in the red wine to deglaze the skillet, scraping up any browned bits from the bottom of the pan. Let it simmer for about 2-3 minutes until the wine has reduced by half, enhancing the depth of flavor
- Add the uncooked basmati rice, drained chickpeas, and crushed tomatoes to the skillet. Stir thoroughly to combine all the ingredients.
- Add Broth and Cook:
- Pour in the chicken stock/broth. Season with 1 1/4 tsp of cooking salt and 1/2 tsp black pepper. Stir to ensure everything is well mixed.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a tight-fitting lid and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent sticking and ensure even cooking.
- Serve:
- Once the rice is fully cooked, remove the skillet from heat. Let it sit covered for about 5 minutes to allow the flavors to meld and the rice to finish steaming.
- Fluff the rice with a fork, and sprinkle with finely chopped parsley for a fresh touch.
- Drizzle a bit of extra virgin olive oil over the top for added richness and flavor.
